We started off with a base recipe and smoothie but feel free to enjoy this with your favorite side dishes including but not limited to tortillas, potatoes, avocado, tomato, and even a piece of toast.

Orange Dream Smoothie

1 1/2 cups orange juice, chilled

1 cup light vanilla soy milk, chilled

1/3 cup silken or soft tofu

1 tablespoon dark honey

1 teaspoon grated orange zest

1/2 teaspoon vanilla extract

 8 large ice cubes

4 peeled orange segments (about half an orange)


Turkey (Chorizo Substitute):

 olive oil spray

1 pound 93% ground turkey

3 tablespoons red wine vinegar

2 teaspoons smoky paprika

2 teaspoons ancho chili powder

1/4 teaspoon cayenne pepper

3 cloves garlicminced

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon dried oregano

1/4 teaspoon ground cumin

1/8 teaspoon ground cloves





Orange Dream Smoothie

In a blender, combine the orange juice, soy milk, tofu, honey, orange zest, vanilla, and ice cubes. Blend until smooth and frothy, about 30 seconds.

Pour into tall, chilled glasses and garnish each glass with an orange segment.

Turkey (Chorizo Substitute) & Eggs:

  1. Heat a large cast iron skillet over medium heat, spray with oil, and cook the meat, breaking it up into small pieces.
  2. Season with vinegar and spices and cook until browned and no longer pink in the middle, 10 minutes.
  3. Serve with eggs, breakfast bowls, tacos, burritos & more.
